Lye Cross Farm Organic Cheddar

Mature Farmhouse Cheddar
Lye Cross Farm's award winning Mature Cheddar cheese is carefully matured for ten to fourteen months under controlled conditions, to produce a full flavoured farmhouse cheese with a firm and silky texture.

Vintage Farmhouse Cheddar
A premium quality farmhouse cheddar cheese produced by Alvis Bros Ltd. This cheese is matured for at least fourteen months under controlled conditions to produce a full bodied cheddar cheese with a strong and lingering flavour.

Medium Farmhouse Cheddar
This Lye Cross Cheddar cheese has a slightly more delicate and rounded flavour than the Lye Cross Farmhouse Mature. It is typically left to mature for between six and eight months to produce a cheddar cheese with a pleasant smooth flavour.

Mild Farmhouse Cheddar
A delicate and mellow flavoured cheese with a smooth and creamy texture, typically matured for between three and five months.

Lye Cross Farm Organic Territorials

Farmhouse Double Gloucester
A smooth and creamy textured cheese, pale orange in colour with a mellow flavour. It is carefully matured under controlled conditions for three or four months.

Farmhouse Red Leicester
A firm bodied cheese with a close flaky texture, which is deep orange in colour with a sweet and delicate flavour. It is matured under carefully controlled conditions for three to four months.

Cheshire
A fine moist crumbly textured cheese with a slightly tangy flavour, typically matured for three to four months.

Caerphilly
A creamy open textured cheese with a mild and delicate yet slightly acidic flavour. Typical maturity is two to three months.

Wensleydale
A moist cheese with a crumbly texture and a mild and slightly sweet flavour. Typical maturity is one to three months.

Blue Stilton
A smooth almost buttery texture with a slightly acidic but rounded flavour. Typical maturity is two or three months.
